Snack time just got exciting with this recipe for energy boosting Frozen Yogurt Bark; greek yogurt sweetened with honey and topped with chocolate chips, strawberries and coconut!
So school is back for all kids in the UK now which officially means summer is over. Boo!!
Thankfully the weather is still pretty mild here but that means my fussy eater is still shouting for ice cream and popsicles as a post-nursery snack.
I made some Strawberry Frozen Yogurt Barkearlier in the summer but this time I wanted to experiment with a lower sugar recipe.
And this healthy frozen yogurt bark is a seriously tasty way to satisfy their sweet tooth without all the added sugar that comes with shop bought popsicles and ice creams.
What Yogurt Should You Use?
I chose the Classic Total Greek Yogurt for this recipe which is just a plain greek yogurt.
I buy this a lot as it has one of the lowest sugar contents I can find in the supermarkets.
Obviously it is unsweetened so for kids you may need to add something sweet to it to make it a little more appealing to younger palates.
But personally I prefer to add my own natural sweeteners like a little honey or good quality maple syrup rather than having the refined white stuff pre-added.
Any plain yogurt will work though so it’s really down to personal preference.
You could also use a nice creamy vanilla yogurt or even a flavoured one! It just depends on what you like and how healthy you want your frozen bark to be!
My fussy eater and I had a lot of fun making this Frozen Yogurt Bark.
She chose the toppings (no surprise there considering there is chocolate involved!) but I was able to sneak some raisins, cranberries and coconut flakes into the mixture!
Almost any type of dried fruit and nuts would work in this recipe.
Fresh berries are also perfect for decorating the top as they freeze really well as well as adding a great pop of color to the bark making it colourful and enticing to children.

Ingredients
Yogurt Bark:
500g / 2 cups greek yogurt
2 tbsp honey
1 tbsp cranberries
1 tbsp raisins
Toppings:
5 fresh strawberries, chopped
1 tbsp dark chocolate chips
1 tsp desiccated coconut
Instructions
Mix the yogurt and honey together until well combined. Add the cranberries and raisins and stir again.
Line a baking tray with foil and pour the yogurt mixture on top. Spread it depending on how thick or thin you want your bark to be. Mine was approx ½ inch thick.
Sprinkle the strawberries, chocolate chips and desiccated coconut on top and place in the freezer for 2-4 hours or until it is completely frozen.
Remove from the freezer and use a sharp knife to break the bark into pieces. The bark can be stored in the freezer in food bags.

Fill your popsicle molds with yogurt to create homemade frozen yogurt pops, perfect for hot summer days with the kids. You can add layers of fruits or drizzle with honey before freezing to really pack a punch with natural flavoring.
It's best to keep in mind that the main purpose of freezing yogurt is so you can save it for later use. This process is entirely different from making the frozen yogurt dessert fro-yo, which is essentially yogurt with the texture of ice cream. Hence, you can't just freeze yogurt to make the frozen yogurt dessert.
Therefore, the lower the water content in your yoghurt, the less icy, and more creamy and smooth it'll be. That's why you want to use a nice thick yoghurt for this recipe.
All yogurt—whether full-fat or nonfat, strained (like Greek or skyr), plain or swirled with fruit—can be frozen for up to two months. Technically, it's safe to eat long after that, but two months is really the limit when it comes to taste and texture.
Can you freeze yoghurt? Yes, you can freeze yoghurt but you should be mindful that its texture will change, becoming thinner and less creamy. It will still be fine to use in cooking or smoothies. To freeze small amounts of yoghurt, pop it in ice cube trays, then transfer cubes to a freezer bag and expel air.
One serving of froyo has less than one-fifth as many calories as the same amount of ice cream, making it a good choice if you are trying to lose or maintain weight. Of the three desserts, frozen yogurt also has the lowest total amount of fat, while gelato has almost three times as much fat.
What is the difference between frozen yogurt and ice cream? Both recipes call for dairy and sugar. The dairy in ice cream comes from cream, while frozen yogurt uses cultured milk. The result is that ice cream tends to have a higher fat content, while frozen yogurt contains more sugar to hide its tangier taste.
For best results, you should chill the mixture for several hours or overnight. This helps it freeze faster so that less ice crystals will form as it freezes, resulting in a smoother, creamier frozen yogurt. If using an ice cream maker, follow its instructions to freeze the chilled mixture.
How long does it keep? Once you have cut your frozen yogurt bark, store it in a bag or airtight container with the pieces separated with parchment. It will keep well for up to 3 months. You can enjoy it right from the freezer for an easy summer snack.
However, a common problem many encounter when home-making froyo is the icy, chunky consistency — a result of its low-fat but high-moisture nature. To combat this, simply use rich, high-fat cream products as a base or add it to your base.
The problem is that yogurt, while creamy when you spoon it from the carton, actually contains a good amount of water and not a lot of fat. When you freeze it, the water forms crystals that make fro-yo icy and decidedly non-creamy.
Yogurt fresh from the freezer may be solid, making it difficult to dig into with a spoon, so some thawing may be necessary to soften it. You can also freeze your yogurt into lickable popsicles and eat it straight from the freezer.
Makers of frozen yogurt use active bacterial cultures to ferment the milk. These probiotics may benefit your gut bacteria ( 3 , 16 ). Studies have shown that probiotic yogurt may also improve your health by helping reduce your total and LDL (bad) cholesterol.
Yes? Using yogurt instead of cream typically means a significant reduction in fat and calories. A half-cup serving of frozen yogurt will typically average 100 to 140 calories and zero to 3 grams of fat (a very reasonable sweet treat for any healthy diet).
Yes, you can freeze yogurt to eat like ice cream. Note that the texture may be firmer compared to store-bought frozen yogurt or ice cream, but it still makes a refreshing and healthy snack. How long does yogurt last if I freeze it? Yogurt lasts for one to two months in the freezer.
Yogurt is a popular, tasty, and versatile fermented dairy product. Its health-promoting properties are plentiful. Yogurt's live and active cultures survive the freezing process. Still, you should thaw it in the refrigerator overnight to ensure that it remains safe to eat.
